For a decent espresso coffee I rank the grinder as more important than the espresso machine. A good grinder will set up you up for the all important puck formation and give you the best chance of getting the maximum coffee out of the grinds before the sour and bitter compounds begin to extract.
A good one will: Grind evenly Grind quickly Heat the beans as little as possible Prevent clumping of the grinds Give precise control over dose Be maintained. You have to clean your grinder, oil the parts and change the blades as soon as the pour starts to deteriorate. It beggars belief that the top grinder manufacturers seem oblivious to the issues that baristas have with their equipment. There is no clear best grinder yet, because apparently the boffins designing the grinders don’t pour excellent espresso. |
