The senses of sight, smell, sound and touch form the foundations of craft roasting. Every member of our roasting team has honed the use of these senses to perfection – they know when a coffee’s aromatics are at their height, they know how to caramelise the sugars, and they know how to unlock the optimum flavour and true personality of every coffee.
We invest a huge amount of time and energy in sourcing great speciality coffee and in ensuring that the quality of the beans is preserved when we roast. This means roasting every lot we source in a unique way, to ensure that intrinsic quality of the bean is brought to the fore.
Our team of passionate, dedicated roasters do all this by skilfully operating our collection of small but beautiful drum roasting machines. The coffee gently tumbles in these drum roasters, slowly developing its full flavour in a traditional roasting style. This traditional method is coupled with the use of modern technology, which allows us to monitor how each coffee reacts and develops to even the most subtle change of temperature. Ultimately however, the decision to bring the coffee out of the roaster is down to the people we trust to roast our coffee. Working with coffee in this way is a lifelong journey and our roasting team constantly hone their craft, their passion and their skills.
